Method

  1. Knead the fresh chhena (paneer) until smooth, then shape into small oval/cylindrical pieces.
  2. Prepare a light sugar syrup with sugar, water and cardamom and bring to a gentle boil.
  3. Drop the chhena ovals into the simmering syrup, cover, and cook 15-20 minutes until they swell and turn spongy.
  4. Cool the cham cham in the syrup. Optionally slit and fill with sweetened khoya.
  5. Roll in grated coconut before serving.
