Method

  1. Soak the saffron strands in a spoon of warm milk and keep aside.
  2. Dry roast the cashew nuts in a heavy-bottomed pan on low flame until light golden and fragrant, then remove and keep aside.
  3. In the same pan, heat the milk on medium flame and bring it to a gentle boil, stirring occasionally to prevent it from sticking to the bottom.
  4. Add the sugar and a pinch of salt to the milk, stirring until the sugar dissolves completely.
  5. Lower the flame and simmer the milk for 10 to 12 minutes, stirring frequently, until it thickens slightly and turns a light golden hue.
  6. Add the roasted cashew nuts and the saffron soaked in milk, and simmer for another 5 minutes so the flavours blend well.
  7. Remove from heat and garnish with crushed cardamom just before serving, either warm or chilled.
