
Indori Sabudana Khichdi

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- coriander powder — 1 tsp (ground)
- salt (optional) (whole)
- Sabudana (Tapioca Pearls) — 250 g (soaked)
- Peanuts — 50 g (whole)
- Turmeric Powder — 0.5 tsp (ground)
- Potato — 100 g (chopped)
Tempering
- Cumin Seeds — 1 tsp (whole)
- green chillies — 15 g (slit)
- oil — 2 tbsp (whole)
Method
- Rinse sabudana well and soak in just enough water to cover, overnight or at least 5 hours, until each pearl is soft and squishes easily. Drain off any excess water.
- Dry-roast the peanuts, cool and coarsely crush. Boil and dice the potato.
- Heat oil, splutter cumin seeds, add slit green chillies and the diced potato. Saute until the potato is lightly golden.
- Add the soaked sabudana and crushed peanuts. Add salt and the spice powders, mix gently and cook on low flame 4-5 minutes until the pearls turn translucent. Do not overcook or it turns sticky.
- Finish with a squeeze of lemon and chopped coriander. Serve hot.
