
Gothambu Payasam
Broken wheat (gothambu) simmered in jaggery and coconut milk, flavoured with cardamom. A hearty Palakkad-style Kerala festival payasam.

- Cardamom — 2 piece (ground)

- Jaggery — 100 g (whole)
- Milk — 100 g (whole)
- Coconut — 100 g (chopped)
- salt (optional) (whole)
- Broken Wheat (Dalia - Coarse Grade) — 100 g (whole)
Method
- Wash the broken wheat (gothambu) and pressure-cook with water until soft and mushy.
- Melt the jaggery with a little water, strain, and add to the cooked broken wheat. Cook for a few minutes until combined.
- Add the milk and coconut milk and simmer on low flame until it thickens. Do not boil hard once coconut milk is added.
- Stir in cardamom powder and a pinch of salt. Garnish with coconut bits and cashews fried in ghee, and serve warm.
