Broken wheat (gothambu) simmered in jaggery and coconut milk, flavoured with cardamom. A hearty Palakkad-style Kerala festival payasam.

Method

  1. Wash the broken wheat (gothambu) and pressure-cook with water until soft and mushy.
  2. Melt the jaggery with a little water, strain, and add to the cooked broken wheat. Cook for a few minutes until combined.
  3. Add the milk and coconut milk and simmer on low flame until it thickens. Do not boil hard once coconut milk is added.
  4. Stir in cardamom powder and a pinch of salt. Garnish with coconut bits and cashews fried in ghee, and serve warm.
