
Ganesh Chaturthi Thali
A satvik Ganesh Chaturthi thali of coconut-jaggery steamed modak, chana dal-jaggery puran poli, a matki usal and a spiced potato bhaji, made without onion or garlic.

- Tomato — 2 piece (chopped)

- Wheat Flour (Atta) — 208 g
- Potato — 150 g
- Fresh Coconut — 75 g
- Matki (Sprouted Moth Beans - Premium Grade) — 100 g
- Chana Dal — 100 g
- Water — 225 ml
- Rice Flour (Fine Steamed - South Grade) — 120 g
- coriander powder — 1 tsp (ground)
- Jaggery — 98 g
- Ginger — 1 tsp (ground)
- Turmeric Powder — 0.5 tsp (ground)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
Tempering
- oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Soak the matki overnight or for at least 8 hours, then drain.
- Heat oil and add cumin seeds; once they splutter, add half the chopped tomato, turmeric, red chilli powder and coriander powder to make the usal masala.
- Add the soaked matki to the masala with a little water, cover and cook until the sprouts are soft; this is the usal.
- In the same style, saute the diced potato with the remaining tomato and a pinch of the spice mix until tender to make the bhaji.
- For the puran poli filling, pressure-cook the chana dal until soft, then mash it with the jaggery over low heat until it thickens into a dry puran.
- Knead the wheat flour with water into a soft dough, roll into small discs, stuff with the chana dal-jaggery puran, seal and roll out gently, then roast on a hot tawa until golden spots appear on both sides.
- For the modak, bring water to a boil with a little salt, stir in the rice flour, and knead the hot mixture into a smooth, pliable dough once it cools slightly.
- For the modak filling, cook the grated fresh coconut with jaggery on low heat until it turns glossy and slightly dry.
- Shape small balls of the rice flour dough into cups, fill with the coconut-jaggery mixture, and pleat and pinch closed into the traditional modak shape.
- Steam the shaped modaks for 10-12 minutes until translucent.
- Arrange the usal, bhaji, modak and puran poli together on a plate to complete the thali.
- Garnish the usal and bhaji with chopped coriander leaves before serving.
