
Dharwad Sambar
North Karnataka style sambar with drumstick and local sambar pudi. Slightly sweeter and less tangy than South Karnataka sambar.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Sambar Powder — 3 tbsp (ground)
- Toor Dal — 150 g (whole)
- Drumstick — 100 g (chopped)
- Tomato — 1 piece (chopped)
- salt (optional) (whole)
- Turmeric Powder — 0.5 tsp (ground)
- onion — 0.5 piece (chopped)
- Tamarind — 1 tbsp (whole)
Tempering
- Curry Leaves — 8 piece (ground)
- Coconut Oil — 2 tbsp (whole)
- Mustard Seeds (Black) — 1 tsp (whole)
- Urad Dal — 1 tsp (whole)
Method
- Pressure-cook the toor dal with turmeric and a little water until soft, then mash and keep aside. Soak the tamarind in warm water and extract the pulp.
- Boil the drumstick, onion and tomato with the tamarind extract and salt until the vegetables are soft.
- Add the sambar powder and simmer for a few minutes.
- Add the mashed toor dal, adjust water to a gravy consistency and simmer 5-7 minutes until everything blends well.
- Heat coconut oil, splutter mustard seeds, add urad dal and curry leaves; pour this tempering over the sambar.
- Garnish with coriander leaves and serve hot with rice, idli or dosa.
