
Dasara Festival Pulihora Combo

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)

- Coconut — 100 g (chopped)
- Tamarind — 100 g (whole)
- banana — 100 g (chopped)
- rice — 100 g (ground)
Tempering
- Coconut Oil — 2 tbsp (whole)
Method
- Rinse the rice and cook it with just enough water so the grains stay firm and separate. Spread it on a wide plate to cool completely.
- Soak the Tamarind in hot water for 10 minutes, then squeeze out a thick extract and discard the fibre and seeds.
- Grate the Coconut, and peel and slice the banana into thick rounds. Keep both aside.
- Heat the Coconut Oil in a kadhai until it shimmers, then pour in the tamarind extract with salt and simmer to a thick glossy reduction.
- Off the heat, fold the cooled rice into the thickened tamarind a little at a time until every grain is evenly coated.
- Stir half the grated Coconut through the rice and let it rest for 10 minutes so the flavour settles.
- Arrange the pulihora on the offering plate with the sliced banana and the remaining grated Coconut alongside, scatter Coriander Leaves over the rice and serve.
