Method

  1. Rinse the rice and cook it with just enough water so the grains stay firm and separate. Spread it on a wide plate to cool completely.
  2. Soak the Tamarind in hot water for 10 minutes, then squeeze out a thick extract and discard the fibre and seeds.
  3. Grate the Coconut, and peel and slice the banana into thick rounds. Keep both aside.
  4. Heat the Coconut Oil in a kadhai until it shimmers, then pour in the tamarind extract with salt and simmer to a thick glossy reduction.
  5. Off the heat, fold the cooled rice into the thickened tamarind a little at a time until every grain is evenly coated.
  6. Stir half the grated Coconut through the rice and let it rest for 10 minutes so the flavour settles.
  7. Arrange the pulihora on the offering plate with the sliced banana and the remaining grated Coconut alongside, scatter Coriander Leaves over the rice and serve.
