
Cotton Dosa
A soft, spongy 3-ingredient South Indian dosa made from a fermented batter of idli rice, semolina and coconut, cooked covered on a hot tawa until fluffy like cotton.

Ingredients
- salt — 1 tsp (whole)
- Methi — 2.25 g (ground)
- Fresh Coconut — 1 cup (grated)
- sooji — 170 g (ground)
- Idli Rice — 2 cup (ground)
Method
- firstly, in a large bowl soak 2 cup idli rice, ½ tsp methi for at least 2 hours.
- drain off the water and transfer to the mixer grinder.
- grind the rice to smooth paste.
- transfer the rice batter to a large bowl.
- in the mixer grinder take 1 cup coconut, 1 cup rava, and water.
- grind to smooth paste.
- transfer the rava coconut batter and mix well.
- cover and ferment for 8 hours or until the batter are well fermented.
- after the batter is fermented well, mix the batter gently.
- add 1 tsp salt and mix well adjusting the consistency as required.
- pour the batter over the hot tawa.
- cover and cook until the top of the dosa is cooked completely.
- finally, enjoy cotton dosa with spicy tomato chutney.
