Crispy papdi discs layered with boiled potato and tender Surti flat beans, topped with whisked curd, sweet tamarind chutney and mint-green chutney, finished with chaat masala and roasted cumin.

Method

  1. Boil the potato until fork-tender, then peel and dice into small cubes.
  2. Boil the Surti Papdi (flat beans) separately until just tender, then drain and cool.
  3. Heat oil in a small pan and toss the boiled Surti Papdi and diced potato with salt for a minute to lightly temper them.
  4. Whisk the curd smooth with a little salt until pourable.
  5. Arrange a layer of Papdi Puris on the serving plate, slightly overlapping.
  6. Spoon the tempered potato and Surti Papdi mixture evenly over the papdi.
  7. Pour the whisked curd generously over the top, covering the papdi and vegetables.
  8. Drizzle sweet chutney across the curd in thin lines.
  9. Drizzle Green Chutney (mint) over the top in the same way.
  10. Sprinkle chaat masala powder and roasted cumin powder evenly over the chaat.
  11. Garnish with chopped coriander leaves and serve immediately while the papdi is still crisp.
