
Chhattisgarhi Char Magaz Sabzi
Mixed melon seeds curry with paneer in mild gravy. CG festive sabzi for weddings.

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- salt (optional) (whole)
- Garlic — 1 tsp (ground)
- Ginger — 1 tsp (ground)
- Turmeric Powder — 0.5 tsp (ground)
- Tomato — 2 piece (chopped)
- onion — 2 piece (chopped)
- Paneer — 100 g (whole)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
Tempering
- oil — 2 tbsp (whole)
- Cumin Seeds — 1 tsp (whole)
Method
- Peel and finely chop the onion, and chop the tomato finely. Crush the ginger and garlic together into a coarse paste.
- Cut the paneer into cubes.
- Heat the oil in a kadai. Add the cumin seeds and let them sizzle.
- Add the chopped onion and saute till soft and light golden, then add the ginger-garlic paste and cook till the raw smell goes away.
- Add the chopped tomato, turmeric powder and red chilli powder. Cook on medium heat, stirring often, till the tomato turns soft and the masala starts leaving oil at the edges.
- Add salt and a little water to bring the gravy to the consistency you like, then let it simmer for 3-4 minutes.
- Gently add the paneer cubes and simmer for another 3-4 minutes so they soak up the gravy without breaking.
- Switch off the flame, garnish with chopped coriander leaves and serve hot with roti or rice.
