
Chhath Rasiyav
Sweet rice kheer (Rasiya) simmered with new-harvest rice, jaggery and milk, flavoured with cardamom. Made as Chhath Puja Kharna bhog; uses no oil or ghee.

- Jaggery — 100 g (whole)
- rice — 100 g (ground)
- Milk — 100 g (whole)
- salt (optional) (whole)
Method
- Wash the rice and soak for 15-20 minutes; drain.
- Bring the milk to a boil in a heavy-bottomed pan, add the drained rice and simmer on low flame, stirring often, until the rice softens and the mixture thickens.
- Lower the flame, add grated jaggery and stir until fully dissolved (do not boil hard after adding jaggery so the milk does not split).
- Add cardamom powder, mix, and simmer 2-3 minutes more to a creamy kheer consistency.
- Serve warm or chilled as Chhath bhog.
