
Chamba Makki Roti
Cornmeal flatbread from Chamba valley. Thicker and denser than Punjab version, eaten with saag and ghee.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)

- Ghee — 100 g (whole)
- Maize Flour (Makki Atta - Yellow Coarse) — 250 g (ground)
Tempering
Method
- Take maize flour (makki atta) in a bowl with a pinch of salt. Gradually mix in warm water and knead gently into a dough -- maize flour is gluten-free and a little crumbly.
- Divide into portions. Pat each by hand between wet palms into a thick roti -- the Chamba style is denser and thicker than the Punjab version.
- Carefully transfer to a hot tawa.
- Cook on medium flame with ghee/oil, pressing gently, until both sides are golden brown.
- Serve hot with saag and a dollop of ghee.
