Method

  1. In a bowl, mix the maize flour with the curd, salt and a little warm water, and knead into a soft, pliable dough. Rest for 5 minutes.
  2. Divide the dough into equal portions and roll each into a ball.
  3. Pat or roll out each ball between two sheets of plastic or on a greased surface into a roti, as makki dough is soft and can crack easily.
  4. Heat a tawa on medium flame and carefully transfer the rolled roti onto it.
  5. Cook the roti, drizzling a little oil around the edges, and flip once or twice, pressing gently with a cloth or spatula until golden-brown spots appear on both sides.
  6. Remove from the tawa, garnish with chopped coriander leaves, and serve hot with a dollop of curd or butter.
