
Bajre Ki Khichdi Rajasthani
Pearl millet and moong dal khichdi with ghee. Warming winter comfort food eaten with kadhi and buttermilk.

Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Whole Pearl Millet (Desi Bajra - North Grade) — 150 g (whole)
- Moong Dal — 100 g (whole)
- salt (optional) (whole)
- Turmeric Powder — 0.5 tsp (ground)
- Ghee — 100 g (whole)
Tempering
- Cumin Seeds — 1 tsp (whole)
- oil — 2 tbsp (whole)
Method
- Rinse whole pearl millet (bajra) and moong dal. Optionally pound the bajra lightly and soak for a few hours for faster cooking.
- In a pressure cooker, heat ghee. Add cumin seeds and let them splutter.
- Add the drained bajra and moong dal, turmeric, red chilli and salt. Saute for a minute.
- Add about 4-5 cups water. Pressure cook until bajra and dal are soft and porridge-like (about 6-8 whistles).
- Mash lightly, adjust consistency with hot water, top with extra ghee. Garnish with coriander. Serve hot with kadhi, buttermilk or curd.
