  1. To begin making the Sun Dried Raw Mango Raita recipe, soak the dry mango pieces (ambula) in water for minimum 1-2 hours in a bowl and keep aside.Put 2 tablespoon of mustard seeds with green chilies in a blender jar and make a smooth paste.
  2. Add the mustard green chilli paste to a big bowl and add curd, sugar, salt, grated coconut and mix well to combine..Next, add the soaked dry mango pieces (ambula).
  3. Mix well again.Now heat mustard oil in a pan.
  4. Add in mustard seeds, curry leaves and red chilies and allow to splutter.Once done turn of heat and pour this tempering on the dry mango mixture.
  5. Cover and leave for 1-2 hours so that all the flavours  infuse well together.
  6. Serve Sun Dried Raw Mango Raita along with Steamed Rice, Kumror/Kaddu Posto  and Elai Vadam for a weekday meal.
