
Thayir Vadai
Urad dal vadas soaked in creamy seasoned yogurt with pomegranate. Thanjavur festival snack and temple prasadam.

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main

- Curd — 100 g (whole)
- Toor Dal — 100 g (whole)
- Urad Dal — 100 g (whole)
Tempering
- Coconut Oil — 2 tbsp (whole)
Method
- Heat the Coconut Oil in a deep kadhai over medium flame to 175 C.
- Drain the Urad Dal and Toor Dal that soaked 8 hours and grind them with salt and very little water into a thick, fluffy batter.
- Beat the batter 3 minutes with your hand until it lightens and a drop of it floats in water.
- Wet your palm, shape a spoon of batter into a disc with a hole in the middle and slide it into the hot oil.
- Fry 3-4 minutes a side until the vadai are deep golden and firm, then drain them.
- Drop the hot vadai into warm salted water for 5 minutes, then press gently between your palms to squeeze the water out.
- Whisk the Curd with salt until smooth, pour it over the soaked vadai and rest them 30 minutes so they drink it in.
- Garnish with Coriander Leaves and serve chilled.
