Thaliya Puttu (Coorg Steamed Rice Cake)

Thaliya Puttu is a traditional Coorg (Kodava) steamed rice cake. A smooth rice batter is poured into a greased plate (thali) or mould and steamed until set into a soft, spongy cake. Mild and easy to digest, it is served hot for breakfast or dinner with chutney or a light curry. About 250 calories per serving.

  1. Wash and soak the rice for a few hours, then grind it with a little water into a smooth, pourable batter. Stir in salt to taste.
  2. Lightly grease the steaming plate (thali) or moulds with coconut oil so the puttu does not stick.
  3. Pour the batter into the greased plate to about one-third depth and set up the steamer with water at a rolling boil.
  4. Steam the puttu on medium heat for about 15-20 minutes until set and a skewer inserted in the centre comes out clean. Do not fry.
  5. Rest for a couple of minutes, then unmould the steamed cake. Drizzle with ghee, garnish with fresh coriander, and serve hot with chutney or a light curry.
