
South Karnataka Chakli
Spiral-shaped crunchy savory made from rice flour and urad dal flour. South Karnataka Deepavali snack with sesame.

- sesame seeds — 40 g (whole)
- salt (optional) (whole)
- urad dal flour — 30 g (whole)
- Asafoetida — 1 g
- Rice Flour — 150 g (ground)
- ajwain — 2 g
Tempering
- Coconut Oil — 2 tbsp (whole)
Method
- Mix rice flour and urad dal flour with sesame seeds, ajwain, hing and salt.
- Rub in a tablespoon of hot coconut oil, then add water little by little to bring it together into a soft, smooth dough.
- Grease a chakli press with a little oil, fill it with dough and pipe spirals directly onto a plate or parchment paper, sealing the ends.
- Deep-fry the spirals in medium-hot oil on low-medium flame, turning occasionally, until golden and crisp throughout (fry on low heat so the inside cooks before the outside browns too fast).
- Drain on paper towels and cool completely before storing airtight; serve as a Deepavali tea-time snack.
