
Chakli
Spiral-shaped crispy snack of rice flour, besan and sesame. Western Madhya Pradesh Diwali snack with Maharashtrian roots.

- sesame seeds — 30 g (whole)
- salt (optional) (whole)
- Gram Flour — 40 g
- Asafoetida — 1 g
- Rice Flour — 150 g (ground)
- ajwain — 2 g
Tempering
Method
- Mix rice flour and besan with sesame seeds, ajwain, hing and salt.
- Rub in a tablespoon of hot oil, then add water little by little to bring it together into a soft, smooth dough.
- Grease a chakli press with a little oil, fill it with dough and pipe spirals directly onto a plate or parchment paper, sealing the ends.
- Deep-fry the spirals in medium-hot oil on low-medium flame, turning occasionally, until golden and crisp throughout.
- Drain on paper towels and cool completely before storing airtight; serve as a Diwali tea-time snack.
