
Rava Chakli
A crispy semolina and rice flour murukku spiral, flavoured with sesame seeds, red chilli and a pinch of asafoetida, deep-fried until golden. Also known as rava murukku or suji chakli, it is a popular Diwali and tea-time snack.

- sesame seeds — 1 tbsp (whole)
- Butter — 2 tbsp (whole)
- Rice Flour — 2 cup (ground)
- salt — 1 tsp (whole)
- Water — 2 cup (whole)
- Suji (Fine Grade) — 1 cup (ground)
- red chilli — 1 tsp (ground)
Tempering
- Asafoetida — 1 pinch (ground)
Method
- firstly, in a large kadai take 2 cup water and get to a boil.
- once the water comes to a boil, add 1 cup rava and cook well.
- now add 2 tbsp butter. keep stirring until the rava absorbs water and starts to separates the pan.
- further add 2 cup rice flour, 1 tbsp sesame seeds, 1 tsp chilli powder, pinch hing and 1 tsp salt.
- crumble and mix to form a moist flour.
- add ¼ cup water and knead dough.
- start preparing chaklis and deep fry in hot oil.
- finally, serve crispy and rava murukku / sooji chakli with masala tea or masala milk.
