  1. To begin making South Indian Coconut Chutney with Coconut Water, take the dry coconut, roasted gram dal, green chillies and a few curry leaves in a blender.
  2. Blend it with the coconut water and rock salt until you get a semi-smooth paste like chutney. Traditionally this is kept coarser as well, which also tastes yum. Pour the contents of the chutney into a large mixing bowl.
  3. For the tempering, heat the coconut oil in a small pan. Add the mustard seeds and let them splutter, then add the urad dal and remaining curry leaves and saute for about a minute till the dal turns golden and crunchy.
  4. Switch off the heat. After a few minutes when the tadka has cooled a bit, pour it over the chutney and mix well just before serving.
