
Pakodi Ka Salan

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)

- Garlic — 1 tsp (ground)
- Gram Flour — 100 g (ground)
- Curd — 100 g (whole)
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- coriander powder — 1 tsp (ground)
- Turmeric Powder — 0.5 tsp (ground)
- onion — 100 g (chopped)
- salt (optional) (whole)
- Ginger — 1 tsp (ground)
- Tomato — 2 piece (chopped)
Tempering
- Cumin Seeds — 1 tsp (whole)
- oil — 2 tbsp (whole)
Method
- Make a thick batter with the gram flour, a little salt, red chilli powder and water, then deep fry small pakodis in hot oil until golden and crisp. Keep aside.
- Peel and chop the onion, ginger and garlic finely, and puree or chop the tomato.
- Heat the oil in a pan and add the cumin seeds, letting them splutter.
- Add the chopped onion, ginger and garlic, and saute until the onion turns golden brown.
- Add the tomato, turmeric powder, coriander powder and remaining red chilli powder, and cook until the tomato softens and the oil separates.
- Whisk the curd well and add it to the pan along with 2 cups of water, stirring continuously to avoid curdling. Bring to a gentle boil.
- Lower the flame and simmer the gravy for 8 to 10 minutes until it thickens slightly, then add salt to taste.
- Add the fried pakodis to the simmering gravy and cook for 4 to 5 minutes so they soak up the flavours without turning too soft.
- Garnish with chopped coriander leaves and serve the Pakodi Ka Salan hot with rice or roti.
