- Gram Flour — 0.5 cup (ground)
- Turmeric Powder — 0.5 tsp (ground)

- Brinjal — 0.33 cup (chopped)
- Coriander Seeds — 0.5 tbsp (whole)
- onion — 0.5 piece (sliced)
- Coriander Leaves (optional) (chopped)
- Sunflower Oil (optional) (whole)
- Potato — 0.33 cup (chopped)
- Cauliflower — 0.33 cup (chopped)
- Roasted White Sesame Seeds — 2 piece (whole)
- ginger garlic paste — 2 tsp (ground)

- Fresh Kadi Patta (Small-Leaf Coastal Curry Leaves) (optional) (ground)
Method
- To begin making the Pakodi Koora, heat oil in a kadai/wok for frying.
- Sprinkle water little be little to bring the pakora batter together.You should be able to drop this mixture into the oil in dry dollops.Drop these pakoras into hot oil and cook them till golden brown.
- To this add turmeric powder, coriander powder and red chilli powder, mix well, add the fried pakodis and cook for about 3 to 5 minutes.
- This is a semi-dry gravy.Garnish with remaining coriander leaves and it is ready to be served.Serve Pakodi Koora with a bowl of hot steamed rice and south Indian style Papadums.
