Method

  1. Soak the dried fish in warm water for 15-20 minutes to soften and rehydrate; drain.
  2. Heat oil in a kadhai; add cumin seeds and let them splutter.
  3. Add chopped onion and saute until golden.
  4. Add ginger-garlic paste and saute till the raw smell disappears.
  5. Add chopped tomato, turmeric, red chilli powder and coriander powder; cook until the masala thickens.
  6. Add the rehydrated dried fish and mix well to coat with the masala.
  7. Pour in water, cover and simmer for 15-18 minutes so the dried fish releases its concentrated umami into the curry.
  8. Adjust salt, garnish with coriander leaves, and serve hot with rice.
