  1. Clean the fish pieces and pat dry.
  2. Heat oil in a pan; add cumin seeds and let them crackle.
  3. Add chopped onion and saute till soft.
  4. Add ginger-garlic paste and stir till fragrant.
  5. Add chopped tomato with turmeric and red chilli powder; cook till the tomato softens.
  6. Pour in the apong (fermented rice beer) in place of plain water -- the defining Apatani touch, lending a mild tangy-fermented note.
  7. Bring to a gentle simmer, then add the fish pieces.
  8. Cover and poach on low heat for 10-12 minutes until the fish is cooked and the broth thickens slightly.
  9. Season with salt, garnish with coriander leaves, and serve hot with steamed rice.
