  1. Clean the fish pieces; thinly slice the fresh bamboo shoot and parboil briefly to remove bitterness.
  2. Heat a little oil in a pan; add cumin seeds and let them crackle.
  3. Add chopped onion and saute lightly -- Naga cooking keeps oil and spice minimal.
  4. Add ginger-garlic paste and stir for a minute.
  5. Add chopped tomato with the turmeric, red chilli powder and coriander powder; cook briefly.
  6. Add the parboiled bamboo shoot and enough water to make a thin broth; bring to a boil.
  7. Gently add the fish pieces and simmer on low heat for 12-15 minutes until the fish is cooked and the bamboo shoot is tender, keeping the broth thin and light.
  8. Season with salt, finish with coriander leaves, and serve hot with rice.
