Noon Chai

Pink salted tea made with special tea leaves, milk, baking soda, and salt. Iconic Kashmiri morning ritual.

Method

  1. Bring the water to a boil in a deep pan. Add the green tea leaves and boil on high heat for 5-6 minutes, stirring occasionally.
  2. Add the baking soda and continue boiling, aerating the tea by scooping and pouring it back into the pot repeatedly, until the liquor turns a deep reddish colour.
  3. Add the milk and salt, and bring to a boil again until the tea turns pale pink. Simmer for 2-3 minutes.
  4. Strain and serve the Noon Chai hot, traditionally with Kashmiri bread like girda or kulcha.
