
Noon Chai
Pink salted tea made with special tea leaves, milk, baking soda, and salt. Iconic Kashmiri morning ritual.

- Water — 2 cup (whole)
- Milk — 240 g (whole)
- Green Tea (Whole Leaf - Nilgiri Grade) — 10 g (whole)
- salt — 2 g (whole)
Tempering
- Baking Soda (Food Grade Sodium Bicarbonate) — 2 pinch (whole)
Method
- Bring the water to a boil in a deep pan. Add the green tea leaves and boil on high heat for 5-6 minutes, stirring occasionally.
- Add the baking soda and continue boiling, aerating the tea by scooping and pouring it back into the pot repeatedly, until the liquor turns a deep reddish colour.
- Add the milk and salt, and bring to a boil again until the tea turns pale pink. Simmer for 2-3 minutes.
- Strain and serve the Noon Chai hot, traditionally with Kashmiri bread like girda or kulcha.
