
Lahsun Ki Chutney Rajasthani

- red chilli — 20 g (ground)
- Garlic — 100 g (ground)

Tempering
Method
- Peel 100 g garlic cloves and roughly chop them. Soak 20 g dry red chillies in warm water for 15 minutes until softened.
- Drain the chillies. Grind the garlic, soaked red chillies and salt into a coarse-to-smooth paste, adding a little water only if needed.
- Heat the oil in a small pan until hot, then lower the flame and add the ground garlic-chilli paste.
- Saute on low flame for 4-5 minutes, stirring, until the raw garlic smell goes and the oil separates at the edges.
- Cool completely and store in a clean, dry glass jar. Serve this fiery Rajasthani lahsun chutney with bajra roti, dal-baati or parathas.
