
Lahsun Chutney
Pounded garlic-chilli chutney with mustard oil. Dal-chawal essential.

Main
- dry red chillies — 4.7 tsp (whole)
- Garlic — 10.6 tsp (chopped)
- salt (optional) (whole)
Tempering
- cumin — 0.6 tsp (ground)
- Mustard Oil — 6 tsp (whole)
- Asafoetida — 0.13 tsp (ground)
- Mustard Seeds (Black) — 0.9 tsp (whole)
Method
- Soak the dried red chillies in a little hot water for 15-20 minutes to soften. Peel the garlic cloves.
- Heat mustard oil in a pan; add the garlic and roast on low flame until golden and fragrant.
- Add the soaked red chillies and saute for 2-3 minutes.
- Pound or grind the roasted garlic-chilli mixture with salt to a coarse paste, adding a little water.
- Temper with mustard seeds, cumin and a pinch of hing in hot mustard oil; pour over the pounded chutney and mix. Serve with dal-chawal or roti.
