
Kaya Tholi Thoran
Kerala Vegetarian semi-dry thoran made from raw banana peel (kaya tholi) stir-fried with fresh grated coconut, shallots, green chilli, garlic and curry leaves. A traditional waste-not Malayali side, moderately spiced with balanced flavours.

- salt (optional) (whole)
- Garlic — 3 piece (chopped)
- Shallots — 6 piece (chopped)
- Turmeric Powder — 0.25 tsp (ground)
- Sunflower Oil — 1 tbsp (whole)
- green chillies — 4 piece (chopped)
- banana skin — 2 piece (chopped)
- Fresh Coconut — 0.5 cup (grated)
- Water — 2 cup (whole)
Tempering
- dry red chillies — 2 piece (whole)
- Cumin Seeds — 0.5 tsp (whole)
- Curry Leaves — 8 piece (whole)
- Mustard Seeds (Black) — 0.25 tsp (whole)
Method
- Remove the peel from the raw plantain, wash it well and chop the banana skin finely
- Cook the chopped banana skin with turmeric powder, salt and enough water till it turns tender, then drain any excess water
- Coarsely grind the fresh coconut, shallots, green chillies and garlic together into a coarse mixture
- Heat sunflower oil in a pan and crackle mustard seeds and cumin seeds, then add dry red chillies and curry leaves
- Add the cooked banana skin and the ground coconut mixture, mix well and saute on low flame for a few minutes till the raw smell goes and everything comes together
- Check the salt, give a final mix and serve the Kaya Tholi Thoran hot
