
Karanji
Karanji is the crisp, flaky deep-fried Maharashtrian sweet pastry made for Diwali. A maida-and-rava dough is rolled thin, filled with a sweet mixture of roasted coconut, sugar, poppy seeds, dry fruits and cardamom, sealed into a half-moon and deep-fried golden.

- sugar — 0.5 cup (whole)
- Poppy Seeds (Gasagase) — 13.5 g (roasted)
- All-purpose Flour — 1 cup (ground)
- sooji — 30 g (ground)
- Coconut — 100 g (chopped)
- salt (optional) (whole)
Tempering
Method
- Make a stiff dough with maida, fine rava, a little hot oil (moan) and water. Cover and rest 20-30 minutes.
- For the filling, dry roast the grated coconut till light golden, then mix with powdered sugar, roasted poppy seeds, chopped dry fruits and cardamom powder.
- Roll the dough into small thin circles (puris).
- Place filling on one half, moisten the edges, fold into a half-moon and crimp/seal tightly.
- Deep fry on low-medium heat till pale golden and crisp. Drain and cool fully before storing.
