
Braj Gujiya
Khoya-filled fried pastry. Holi and year-round sweet.

- Cardamom — 2 piece (ground)

- badam — 30 g (whole)
- salt (optional) (whole)
- sugar — 0.5 cup (whole)
- Khoya (Dhap - Soft/Moist) — 100 g (whole)
- All-purpose Flour — 2 cup (ground)
Tempering
Method
- Roast khoya in a pan on low flame until it releases fat and turns light golden. Cool, then mix with powdered sugar, chopped almonds and cardamom to make the filling.
- Rub a little warm ghee into the maida, then add water in parts and knead a stiff, smooth dough. Cover and rest 20 minutes.
- Divide the dough into small balls and roll each into a small thin circle (puri size).
- Place a spoon of filling on one half, moisten the edges, fold into a half-moon and seal by pressing or pleating the rim so the filling does not leak.
- Heat oil in a kadhai on medium-low and deep fry the gujiyas in batches until crisp and golden. Drain and cool completely before storing.
