
Kadhi (Traditional Sindhi-Hindu Tamarind-Besan Curry)
The defining Sindhi-Hindu Sunday lunch — a sour, tamarind-based besan kadhi (not yogurt-based), made by browning chickpea flour in oil then simmering with drumstick, okra, potato, tomato and cluster beans, finished with a mustard, fenugreek and curry leaf tempering. Eaten with steamed rice and a spoonful of pickle. Distinct from Punjabi/Gujarati kadhi.

Ingredients
- dry kashmiri chillies — 4 g
- salt — 7 g
- tomato ripe — 80 g
- Asafoetida — 1 g
- bhindi — 80 g (whole-ends-trimmed)
- Turmeric — 3 g
- Drumstick — 100 g (cut-2-inch)
- Cumin Seeds — 3 g
- Cluster Beans (Gavar) (optional) — 60 g (cut-1-inch)
- Tamarind (Block) — 30 g
- Curry Leaves — 3 g
- Mustard Seeds (Black) — 3 g
- Potato — 120 g (cubed)
- methi seeds — 2 g
- Chickpea Flour — 60 g (besan)
- Mustard Oil — 40 g
- ginger paste — 10 g
- green chillies — 8 g
Method
- Soak 30 g tamarind in 250 ml hot water for 15 min; squeeze pulp.
- Heat 30 g mustard oil in heavy kadai. Splutter mustard, fenugreek, cumin seeds. Add asafoetida and curry leaves.
- Add 60 g besan to the hot oil. Roast on LOW, stirring constantly, for 8-10 min until deep golden brown and intensely nutty — this is the signature step.
- Add ginger paste, slit green chillies, turmeric and kashmiri chilli. Cook 1 min.
- Slowly pour in 1 L hot water while whisking — prevents lumps. Add tamarind extract, salt and chopped tomato.
- Add the cubed potato. Bring to boil; simmer 10 min on medium-low.
- Add drumstick, cluster beans, okra. Cover; simmer 12 min on LOW till all vegetables are tender and the kadhi has thickened to a pourable consistency.
- Heat remaining 10 g oil; splutter a final tempering of mustard, curry leaves and one slit green chilli. Pour over the kadhi. Switch off, cover 5 min. Serve with steamed rice and aloo tuk.
