Puffed rice tossed raw with mustard oil, onion, green chilli, peanuts, sev and a squeeze of lemon -- Kolkata's classic spicy evening street snack.

Ingredients
Garnish
- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- green chillies — 2.5 g (chopped)
- Sev — 1.25 tbsp (whole)
- Lemon — 5 g (whole)
- onion — 60 g (chopped)
- salt (optional) (whole)
- Puffed Rice — 120 g (whole)
- Peanuts — 13 g (whole)
Tempering
- Mustard Oil — 2 tbsp (whole)
Method
- Pour the Mustard Oil into a small bowl and keep it ready -- it goes in raw, never heated.
- Tip the Puffed Rice into a large dry mixing bowl.
- Add the chopped onion and Green Chilli.
- Add the Peanuts and Sev for crunch, and salt to taste.
- Drizzle the Mustard Oil over in a thin stream and squeeze in the Lemon.
- Toss hard for a minute with both hands until every grain is coated and smells of the raw Mustard Oil.
- Garnish with Coriander Leaves and serve immediately in a paper cone.
