- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- green chillies — 4 g
- salt (optional) (whole)
- onion — 100 g (chopped)
- Tamarind — 20 g
- Fresh Coconut — 40 g
- Puffed Rice — 240 g
Tempering
Method
- Soak the Tamarind in a little warm water for 10 minutes and extract the pulp.
- Heat the oil in a large pan on low flame and add the Green Chilli, stirring for 30 seconds.
- Add the Puffed Rice to the pan and toss quickly on low flame for 2 minutes so it lightly crisps without burning.
- Turn off the flame and transfer the puffed rice to a large mixing bowl.
- Add the onion, Fresh Coconut, tamarind pulp, and salt.
- Toss everything together vigorously for a minute so the puffed rice absorbs the tangy, spiced flavours.
- Garnish with Coriander Leaves and serve immediately while still crisp.
