Method

  1. Soak the Tamarind in a little warm water for 10 minutes and extract the pulp.
  2. Heat the oil in a large pan on low flame and add the Green Chilli, stirring for 30 seconds.
  3. Add the Puffed Rice to the pan and toss quickly on low flame for 2 minutes so it lightly crisps without burning.
  4. Turn off the flame and transfer the puffed rice to a large mixing bowl.
  5. Add the onion, Fresh Coconut, tamarind pulp, and salt.
  6. Toss everything together vigorously for a minute so the puffed rice absorbs the tangy, spiced flavours.
  7. Garnish with Coriander Leaves and serve immediately while still crisp.
