  1. Cut the chicken into bite-sized pieces.
  2. In a bowl, mix the Ginger, Garlic, Red Chilli Powder, Curd, and salt into a smooth marinade.
  3. Add the chicken pieces and coat well, then set aside to marinate for 20 minutes.
  4. Sprinkle in the Gram Flour and mix again so it forms a thick batter clinging to each piece.
  5. Heat the Coconut Oil in a pan on medium-high flame.
  6. Fry the battered chicken pieces in batches for 5-6 minutes, turning occasionally, until deep golden and cooked through.
  7. Drain the fried chicken on a paper towel.
  8. In the same pan, add the Curry Leaves and let them crackle for 20 seconds.
  9. Toss the fried chicken back through the curry leaves for 30 seconds.
  10. Garnish with Coriander Leaves and serve hot.
