Goan Prawn Pickle

Prawns pickled in a spicy vinegar masala with Goan red chillies, onion, ginger and garlic (balchão style). Long-lasting Catholic Goan preserve.

  1. Clean and devein the prawns, then marinate briefly with salt.
  2. Dry roast the mustard seeds and fenugreek seeds, cool, and grind to a coarse paste with the red chilli powder and vinegar.
  3. Heat the mustard oil and coconut oil together; sauté the chopped onion until soft, then add the ginger-garlic and fry until fragrant.
  4. Add the ground masala paste and cook on low heat until the oil separates and the raw smell disappears.
  5. Add the prawns and cook until just done, then stir in the remaining vinegar and simmer for 2-3 minutes.
  6. Cool completely and store in a clean, dry glass jar; let it mature for at least a week before serving.
