  1. For the poi: mix whole wheat flour, wheat bran, salt and yeast. Knead into a soft dough with warm water; cover and rest for 1-1.5 hours till doubled.
  2. Divide into portions, shape into small rounds, flatten slightly and rest for 15 minutes.
  3. Bake in a hot oven (or on a covered griddle) until puffed and lightly browned, forming a hollow pocket.
  4. For the bhaji: pressure-cook the potato and dried white peas until soft; mash lightly.
  5. Heat coconut oil and ghee in a pan; saute chopped onion till golden. Add grated coconut and saute briefly.
  6. Add the mashed potato-pea mixture with a little water; simmer for 5-6 minutes to a thick bhaji. Adjust salt.
  7. Garnish with coriander leaves. Serve the warm poi alongside the bhaji for dipping.
