
Goan Pao Bhaji
Goan-style mashed vegetable curry with coconut twist served with poi bread. Different from Mumbai version.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Turmeric Powder — 0.5 tsp (ground)
- coriander powder — 1 tsp (ground)
- Coconut — 70 g (chopped)
- salt (optional) (whole)
- Potato — 150 g
- Red Cowpeas (Thatta Payaru) — 150 g
- onion — 80 g
Tempering
- Coconut Oil — 2 tbsp (whole)
Method
- Soak the red cowpeas for 4-6 hours (or overnight); pressure-cook with the potato until soft (3-4 whistles). Drain, reserving some cooking liquid.
- Dry-roast the grated coconut in a pan on low heat, stirring constantly, until golden brown (10-12 minutes). Cool and grind to a smooth paste with the coriander powder, red chilli powder and turmeric, using a little water.
- Heat coconut oil in a kadhai; add chopped onion and saute till golden.
- Add the ground coconut-spice paste; saute for 2-3 minutes till fragrant and the oil separates slightly.
- Add the cooked cowpeas and potato along with a little reserved cooking liquid; mash lightly and simmer for 8-10 minutes to a thick, chunky curry.
- Adjust salt. Garnish with coriander leaves. Serve hot with pao (bread) or poi.
