Goan Pao Bhaji

Goan-style mashed vegetable curry with coconut twist served with poi bread. Different from Mumbai version.

  1. Soak the red cowpeas for 4-6 hours (or overnight); pressure-cook with the potato until soft (3-4 whistles). Drain, reserving some cooking liquid.
  2. Dry-roast the grated coconut in a pan on low heat, stirring constantly, until golden brown (10-12 minutes). Cool and grind to a smooth paste with the coriander powder, red chilli powder and turmeric, using a little water.
  3. Heat coconut oil in a kadhai; add chopped onion and saute till golden.
  4. Add the ground coconut-spice paste; saute for 2-3 minutes till fragrant and the oil separates slightly.
  5. Add the cooked cowpeas and potato along with a little reserved cooking liquid; mash lightly and simmer for 8-10 minutes to a thick, chunky curry.
  6. Adjust salt. Garnish with coriander leaves. Serve hot with pao (bread) or poi.
