
Fafda
Crispy besan strips deep-fried with ajwain. Rajasthani version of Gujarati fafda — thicker, spicier, with more ajwain flavor.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)

- Gram Flour — 100 g (ground)
Tempering
Method
- Heat the oil in a deep kadhai over medium flame to 180 C.
- Mix the Gram Flour with salt and about 40 ml water into a firm dough and knead it 5 minutes until it turns stretchy.
- Divide into 12 small balls and rest them 10 minutes under a cloth.
- Press each ball on a greased board with the heel of your palm, dragging it out into a long thin strip.
- Lift the strips carefully and slide them into the hot oil, two or three at a time.
- Fry 60-90 seconds a side, pressing lightly with a slotted spoon, until crisp and pale gold.
- Drain well and serve warm.
