
Dal Bafla
Dal bafla is a Malwa (Madhya Pradesh) dish of wheat-flour and semolina dough balls that are boiled, then roasted and dipped in ghee, served with a tempered moong dal simmered with onion, tomato, green chilli and ginger-garlic. Eaten hot with the baflas soaked in ghee.

- cumin — 1 tsp (ground)
- salt — 1 tsp (whole)
- green chillies — 1 piece (chopped)
- Water — 3 cup (whole)
- Wheat Flour (Atta) — 1.75 cup (ground)
- green moong dal — 0.5 cup (whole)
- ginger garlic paste — 1 tsp (ground)
- Ghee — 3 tbsp (whole)
- Tomato — 1 piece (chopped)
- mustard — 1 tsp (ground)
- sooji — 42.5 g (ground)
- coriander — 2 tbsp (chopped)
- onion — 1 piece (chopped)
Tempering
- Asafoetida — 1 pinch (ground)
Method
- firstly, in a large mixing bowl take 1¾ cup wheat flour and ¼ cup rava.
- also add 3 tbsp ghee, ¼ tsp turmeric, ¼ tsp ajwain, ¼ tsp baking soda and ½ tsp salt.
- now add water as required and knead the dough.
- now pinch a small ball sized dough and roll.
- boil for 15 minutes, without disturbing.
- drain off the bafla (boiled wheat dough) into a plate.
- now in a tawa heat 2 to 3 tbsp off ghee and roast bafla until it turns golden brown.
- finally, bafla is ready to be enjoyed with rajasthani dal.
