- Ghee — 9 g (whole)
- Coriander Leaves (optional) (chopped)
- Rice Flour (Fine Steamed - South Grade) — 1 tsp (ground)
- green chillies — 1 piece (chopped)
- coconut milk — 1 cup (whole)
- sweet corn — 1 cup (chopped)
Tempering
- Asafoetida — 1 pinch (ground)
- Mustard Seeds (Black) — 1 tsp (whole)
- Curry Leaves — 1 piece (ground)
Method
- Heat a pan on low flame. Add the ghee, and once hot, add mustard seeds and asafoetida; let the mustard seeds splutter.
- Add curry leaves and finely chopped green chilli; saute for a few seconds.
- Add the corn kernels and stir for 5 minutes till the raw smell of the corn goes away.
- Meanwhile, in a small bowl whisk the rice flour and pepper powder smoothly with the thick coconut milk. Pour this mixture into the corn and keep stirring for 5 minutes until it thickens slightly.
- Add water if needed to adjust consistency. Season with salt, garnish with coriander leaves, and serve hot with phulka or chapati.
