Method

  1. Whisk the curd and buttermilk smooth with the gram flour (besan), turmeric, red chilli and salt until no lumps remain. Stir in 2 cups water.
  2. Heat oil in a heavy pan. Add cumin seeds and a pinch of asafoetida; once they splutter add curry leaves, green chillies, ginger-garlic and the chopped onion, and saute briefly.
  3. Pour in the whisked buttermilk-besan mixture, stirring continuously to prevent curdling. It should be thin and pourable; add a little hot water if too thick.
  4. Bring to a gentle boil, then lower the flame.
  5. Simmer on low, stirring often, for 20-25 minutes until the kadhi thickens and loses its raw besan smell.
  6. Adjust salt. Add coriander powder if using.
  7. Give a final tempering of red chilli if desired.
  8. Simmer 2 more minutes.
  9. Garnish with fresh coriander leaves. Serve hot with rice.
