
Bhujia Sev

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Gram Flour — 100 g (ground)
- Matki (Sprouted Moth Beans - Premium Grade) — 100 g (soaked)

Tempering
Method
- Rinse the Matki (sprouted moth beans) well and grind it to a smooth, thick paste using minimal water.
- In a large bowl, combine the ground Matki paste with the gram flour and salt to taste.
- Knead the mixture into a smooth, firm dough, adding water only a little at a time if needed.
- Heat the oil in a kadhai on medium flame for deep frying.
- Fill the dough into a sev press fitted with a thin-holed disc, and press it directly into the hot oil in a circular motion.
- Fry on medium flame, turning occasionally, until the strands turn golden and crisp.
- Remove with a slotted spoon and drain on paper to remove excess oil.
- Let the sev cool completely, then break into smaller pieces.
- Garnish with coriander leaves if using, and store in an airtight container once fully cooled.
