  1. Rinse the Matki (sprouted moth beans) well and grind it to a smooth, thick paste using minimal water.
  2. In a large bowl, combine the ground Matki paste with the gram flour and salt to taste.
  3. Knead the mixture into a smooth, firm dough, adding water only a little at a time if needed.
  4. Heat the oil in a kadhai on medium flame for deep frying.
  5. Fill the dough into a sev press fitted with a thin-holed disc, and press it directly into the hot oil in a circular motion.
  6. Fry on medium flame, turning occasionally, until the strands turn golden and crisp.
  7. Remove with a slotted spoon and drain on paper to remove excess oil.
  8. Let the sev cool completely, then break into smaller pieces.
  9. Garnish with coriander leaves if using, and store in an airtight container once fully cooled.
