Batter-fried brinjal slices in rice flour and besan batter. Bengali monsoon snack, essential with khichuri.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- Mattu Gulla Eggplant — 100 g (chopped)
- salt (optional) (whole)
- Gram Flour — 100 g (ground)
- rice — 100 g (ground)
Tempering
- Mustard Oil — 2 tbsp (whole)
Method
- Wash and prepare all ingredients for Beguni. Chop vegetables, marinate protein if needed.
- Prepare the dough/batter with flour, salt, and water. Knead well and rest for 15 minutes.
- Divide into portions. Roll out or shape as needed. Add stuffing if applicable.
- Cook on a hot tawa with ghee/oil, or deep fry until golden brown.
- Adjust salt and spices. Garnish with fresh coriander leaves. Serve hot.
