
Batata Wada
Spiced mashed-potato ball tempered with mustard seeds and curry leaves, dipped in gram flour batter and deep-fried. The core patty of Mumbai's iconic vada pav.

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)
Main
- salt (optional) (whole)
- Ginger — 10 g
- Turmeric Powder — 2 g
- green chillies — 8 g
- Potato — 500 g (chopped)
- Gram Flour — 1 cup (ground)
- Garlic — 10 g
Tempering
- oil — 2 tbsp (whole)
- Asafoetida — 1 g
- Curry Leaves — 5 g
- Mustard Seeds (Black) — 3 g
Method
- Boil and mash the potatoes.
- Heat oil, splutter mustard seeds, add curry leaves and hing, then ginger, garlic and green chilli; saute briefly.
- Add turmeric powder and the mashed potato; mix well with salt, then shape into small balls.
- Make a thick batter with gram flour, a pinch of turmeric, salt and water.
- Dip each potato ball in the batter to coat well, then deep-fry in medium-hot oil until golden brown and crisp.
- Drain on paper towels, garnish with coriander leaves and serve hot with pav and chutney.
