
Bachali Kura (Spinach Dal)

- Coriander Leaves (optional) (garnish) — 2 tbsp (chopped)

- green chillies — 25 g
- Red Chilli Powder (Lal Mirch) — 1 tsp (ground)
- Tomato — 2 piece (chopped)
- Turmeric Powder — 0.5 tsp (ground)
- coriander powder — 1 tsp (ground)
- onion — 2 piece (chopped)
- Garlic — 1 tsp (ground)
- salt (optional) (whole)
- Toor Dal — 250 g (whole)
- Ginger — 1 tsp (ground)
- Malabar Spinach (Basale) — 300 g
Tempering
- Mustard Seeds (Black) — 1 tsp (whole)
- Coconut Oil — 2 tbsp (whole)
- Curry Leaves — 8 piece (ground)
- Urad Dal — 1 tsp (whole)
Method
- Wash the toor dal. Clean the Malabar spinach (bachali kura) leaves and tender stems, then chop them.
- Pressure cook the toor dal with chopped Malabar spinach, onion, tomato, slit green chillies, turmeric and a little water until soft and mushy.
- Lightly mash the cooked dal-spinach mixture. Add salt, red chilli powder and coriander powder; simmer for a few minutes, adjusting consistency with water.
- Heat oil for the tempering. Add mustard seeds and urad dal; let them splutter. Add curry leaves, crushed ginger and garlic and saute briefly.
- Pour the tempering over the dal. Garnish with coriander leaves and serve hot with rice.
