
Sukat Bhaji
Malvani/Konkan rassa bhaji of dried baby prawns (sukat) cooked with brinjal and potato in a spiced coconut-onion gravy. Served hot with rice or bhakri. About 160 calories per serving.

- Brinjal — 200 g
- salt (optional) (whole)
- Sukka Kolambi (Dried Prawns) — 60 g (chopped)
- Potato — 150 g
Tempering
- Cumin Seeds — 1 tsp (whole)
- oil — 2 tbsp (whole)
Method
- Wash the dried prawns well in water a couple of times to remove excess salt and grit, then soak them in warm water for 10 minutes and drain.
- Chop the brinjal and potato into medium cubes and keep aside.
- Heat oil in a pan and add the cumin seeds, letting them sizzle and release their aroma.
- Add the soaked dried prawns and saute for a couple of minutes until they turn slightly golden and fragrant.
- Add the potato and brinjal pieces, mix well, and cook for 2 minutes on medium flame.
- Add water to bring the curry to a gravy consistency, cover and simmer until the potato and brinjal turn soft and the prawns are well cooked.
- Add salt to taste and simmer for another 2 minutes so the flavours blend together.
- Turn off the flame, garnish with chopped coriander leaves, and serve hot with rice.
