Method

  1. Wash the dried prawns well in water a couple of times to remove excess salt and grit, then soak them in warm water for 10 minutes and drain.
  2. Chop the brinjal and potato into medium cubes and keep aside.
  3. Heat oil in a pan and add the cumin seeds, letting them sizzle and release their aroma.
  4. Add the soaked dried prawns and saute for a couple of minutes until they turn slightly golden and fragrant.
  5. Add the potato and brinjal pieces, mix well, and cook for 2 minutes on medium flame.
  6. Add water to bring the curry to a gravy consistency, cover and simmer until the potato and brinjal turn soft and the prawns are well cooked.
  7. Add salt to taste and simmer for another 2 minutes so the flavours blend together.
  8. Turn off the flame, garnish with chopped coriander leaves, and serve hot with rice.
