
North Karnataka Gojju Pickle
Sweet-sour-spicy tamarind-jaggery gojju used as pickle accompaniment. North Karnataka version thicker and more pungent than south.

Ingredients
Main
- Jaggery — 100 g (whole)
- Tamarind — 100 g (whole)
- salt — 15 g (whole)
- Red Chilli Powder (Lal Mirch) — 6.67 tsp (ground)
Tempering
- methi seeds — 1.8 g (whole)
- Mustard Seeds (Black) — 1 tsp (whole)
- Coconut Oil — 1 tbsp (whole)
Method
- Soak the tamarind in warm water for 20 minutes and extract a thick pulp.
- Heat coconut oil in a kadhai; add mustard seeds and fenugreek seeds and let them splutter.
- Add the tamarind pulp and jaggery; simmer, stirring, until the jaggery fully dissolves.
- Stir in the red chilli powder and salt; cook on low heat until the gojju thickens and a little oil separates at the edges.
- Cool completely and store in a sterilised glass jar; use as a tangy-sweet-spicy pickle accompaniment.
