
Mirchi Loncha
Maharashtrian pickle made with green chilli, red chilli powder, mustard seeds. Pairs well with rice and roti.

- Red Chilli Powder (Lal Mirch) — 2 tsp (ground)
- Mustard Oil — 0.5 cup (whole)
- Turmeric Powder — 2 tsp (ground)
- green chillies — 250 g (chopped)
- salt (optional) (whole)
Tempering
- methi seeds — 1.8 g (whole)
- Mustard Seeds (Black) — 1 tsp (whole)
Method
- Wash and wipe the green chillies fully dry, then slit or cut them into short pieces.
- Coarsely crush the mustard and fenugreek seeds.
- Heat mustard oil till it smokes, cool slightly, then add the crushed seeds, red chilli powder, turmeric and salt off the heat.
- Add the green chillies and mix so they are well coated in the spiced oil.
- Pack into a clean, dry glass jar and let it mature for a few days, stirring occasionally, before serving.
